- 2 cups mixed berries frozen
- 1 tbsp coconut oil
- 1 tbsp chia seeds
- ½ cup coconut cream (see notes for alternatives)
- ½ tbsp erythritol optional
Add all ingredients into a high-speed food processor or blender.
Blend until smooth.
Adjust thickness by adding additional liquid as required. (see notes)
Serve topped with fresh berries and pepitas.
Alternatives:
Coconut cream, unsweetened almond milk or natural greek yogurt.
To get the best results:
To create an ice cream like dessert it is recommended to freeze coconut cream, almond milk or greek yogurt in ice cube trays 24hrs before preparing dessert. When preparing dessert pop out several ice cubes and add to blender along with all other ingredients.
Adjust thickness as desired by adding extra liquid when blending.
